蒸水蛋



雞蛋和水的比例是 1:2 

材料:  
4隻 
雞蛋 
400ml 水  

做法: 
雞蛋和水拌勻。過篩去泡,或用匙羹掏走表面的氣泡。把蛋汁倒進一個深碟 
中。入蒸爐100度蒸13分鐘.

芥蘭炒年糕


材料:
芥蘭
寧波年糕 (食譜)

調味料:
醬油 1tbsp
紹興酒 1tbsp
糖 1tsp

作法:
1.所有食材洗淨. 芥蘭剝除外皮,切段. 寧波年糕切片.
2.起油鍋,待油燒熱後,將芥蘭放入鍋內快速翻炒至軟,加醬油,紹興酒及糖繼續拌炒.
3.待鍋內醬汁煮滾後,放入年糕片慢慢翻炒至軟熟後,即可起鍋.

鹹蛋炒苦瓜


鹹蛋炒苦瓜

讓苦瓜不苦的方法!!

1. 選購苦瓜時丶盡量挑選表面凸起顆粒較大的。顆粒越大丶苦瓜則越不苦。
2. 苦瓜白囊的部份要盡量刮除乾淨丶那是苦味的大部份來源。
3. 去囊後丶可抹上鹽靜置約20分鐘丶使其去除苦水丶再洗淨切片丶下鍋炒。
4. 或去囊後切片丶再放入滾水中汆燙1分鐘丶撈起瀝乾水份丶這樣既能減少苦瓜的苦味丶又能保持脆綠丶下鍋快炒。

聖誕大餐

Roast beef recipe adapted from : Jamie’s Ministry of Food (P.192)


 Ingredients:
1.5kg topside of beef
2 medium onions
1 packet of sprout
1 bulb of garlic

oliver oil
salt
ground black pepper

To prepare your beef:
1. Preheat oven 200oC.
2. Pile all the veg, garlic into the roasting tray and drizzle with olive oil.
3. Drizzle the beef with olive oil and season well with salt and ground black pepper, rubbing it all over the beef, place beef on the of the veg.

To cook your beef:
1. Place the beef in the preheated oven, cook for 1 hour
**Medium-rare, take it out 5 to 10 mins earlier.
**For well done, leave it in for another 10-15mins.
2. When the beef is cooked to your liking, take the tray out of the oven and transfer the beef to a board to rest for 15 mins or so.
