Valentine's Ice-Cream Cone Cupcake
Plain Cupcake Recipe adapted from: Mary Berry's Baking Bible P.121
100g Softened butter
150g Self-raising flour
150g caster sugar (I used 100g)
3 tbsp milk
2 eggs
1/4 tsp vanilla extract
*Put muffin cases into a 12 holes muffin tin.
Method:
1. Measure all the cupcake ingredients into a large bowl and beat until blended and smooth. Spoon evenly between the paper cases.
2. Bake for about 20mins until risen and golden brown. Lift the paper case out of the tin and cool the cake on a wire rack until completely cool before icing.
Butter Icing:
100g softened butter
225g Sifted icing sugar
1/4 tsp vanilla extract
Method:
Beat together all the ingredients to give a creamy thick icing.
Assemble the cupcake and the cone, decorate as you go along.
