Doughnut muffins
Recipe adapted from: tea with Bea P.51
Ingredients:
210g Flour
165g Sugar
1 Egg
187g Butter milk
2 tsp Baking powder
1 tsp Vanilla extract
½ tsp Salt
65g Oil
125g Melted butter
150g Sugar
Method:
Pre-heat oven to 160 °C.
1. Put all the dry ingredients in a bowl.
Add all the wet ingredients and stir
until just combined. Don’t overmix.
2. Spoon the mixture into the muffin tray
holes, filling them three quarters of the way up.
3. Bake in the pre-heated oven for
20-30mins. A wooden skewer inserted in the middle should come out dry and
crumbly.
4. Remove the muffin trays from the oven
and tip the muffins out. Immediately dip the muffins in the melted butter, then
roll in the sugar to liberally and evenly coat.
