Choca Birthday Cupcakes

Choca Cupcakes

Theses is a very rich dark, chocolatey taste Cupcake! 

 Makes 12

100g dark chocolate
150g butter, at room temperature
150g caster sugar
2 eggs
2 tbsp cocoa powder
100g self-raising flour
2 tsp instant coffee, dissolve in 1 tbsp boiling water

1. Preheat the oven 180oC, and then line the muffin tin with paper cases.
2. Melt the chocolate in a heatproof bowl set over a saucepan of simmering water or in a microwave, then set aside to cool.
3. Beat the butter and sugar together in a bowl until pale and fluffy, then in the eggs, one at a time. Stir in the melted chocolate and cocoa powder. Sift the flour into the mixture and stir in, then stir in the dissolved coffee.
4. Spoon the mixture into the paper cases and bake for about 20 mins until risen and a skewer inserted in the centre comes out clean. Transfer to a wire rack to cool.
5. Than you can decorate your cupcakes with your favor toppings!!

I decrease the caster sugar to 70g
