Vanilla and White Chocolate Babycakes

Recipe adapted from: Cupcakes (P.44)

Vanilla and White Chocolate Babycakes

60g butter
60g caster sugar
1 egg, beaten
60g self-raising flour
¼ tsp vanilla extract
1 tbsp milk

To decorate:
60g white chocolate, chopped
some bright color candy


1. Preheat the oven to 160C, then line the muffin tin with petit fours cases.

2. Beat the butter and sugar together in a bowl until pale and fluffy, then beat in the egg, a liitle at a time. Sift the flour into the mixture and fold in, then stir in the vanilla extract and milk.

3. Spoon the mixture into the paper cases, then bake for about 15mintutes until risen and golden and the tops spring back when gently pressed. Transfer to a wire rack to cool.

To Decorate:
1. Place Chocolate into a heatproof bowl and melt over a saucepan of simmering water or in a microwave. Leave to cool slightly.

2. Spoon the chocolate over the cakes, than top each one with a candy. Leave to set and package up as a gift.
