傳統豆腐花 - 石膏粉
食譜取自: 100中式甜品 P.82
傳統豆腐花
材料:
黃豆 200
水8杯
熟石膏粉 1tsp
薯粉 2tsp
水 5tbsp (石膏粉用)
糖水:
冰糖 100g
水150g
薑數片
做法:
1.黃豆洗淨,用水浸約5小時或隔夜,隔去水分.
2.將黃豆及水分兩次放入攪拌機內打爛(我用慢磨機),用布袋隔去豆渣成豆漿.
3.將豆漿煮滾,轉慢火煮約5分鐘.
4.石膏粉,薯粉與水拌勻,放入乾淨的容器中,將豆漿快速地撞入,蓋上蓋,靜置20分鐘待凝固.
5.全部糖水材料放入鍋內,煮至糖溶化.
6.將豆腐花面片去少許,棄掉.餘下的就用糖水配塔食用.
